Greek-Style Shrimp Saute

Don’t you love quick, easy and delicious recipes. This Greek-Style Shrimp Saute is full of flavor but short on ingredients and the time it will take to prepare. It’s perfect for a busy summer evening or really anytime of year.

This recipe is adapted from one of my favorite cookbooks, Fresh Food Fast by Cooking Light. All the recipes feature 5 ingredients and 15 minutes to make. But the Greek-Style Shrimp Saute is easily one of my favorites. It’s on our menu rotation year round.

As promised, its super simple. Shrimp, greek vinaigrette and seasoning, grape tomatoes, Kalamata olives, feta and basil, are sauteed up quickly. Okay, that’s 7 ingredients. The original recipe didn’t use the Greek seasoning and listed the vinaigrette as an option instead of olive or vegetable oil. I think Cooking Light counts seasoning and oils as pantry items and doesn’t include them in the ingredient count. But in this recipe, they bring a lot of flavor so don’t count them out!

Greek-Style Shrimp Saute Goodness

Just for the record, I don’t measure most of the ingredients. I use 1 pint of grape tomatoes, probably a 1/4 to 1/2 cup of olives and plenty of feta cheese. I also use 1.5 pounds of shrimp instead of the 1 pound the recipe calls for. I mean, who doesn’t want more shrimp. That’s the beauty of this simple recipe, you can just add as much or as little of any of the ingredients.

I serve the shrimp over orzo, and I usually add a splash of greek vinaigrette to the cooked orzo just to add a little flavor. Of course, I always serve with extra feta! Yum!

A quick and easy saute of flavor ingredients, and dinner is ready!

Ingredients

  • 4 tablespoons of Greek vinaigrette (I like Girard’s Greek Feta Vinaigrette)
  • 1.5 pounds peeled and deveined large shrimp
  • Greek All Purpose Seasoning
  • 1 cup grape tomatoes, halved
  • 12 chopped pitted Kalamata olives
  • 1/4 cup chopped fresh basil
  • 1 1/2 ounces crumbled feta cheese

Instructions

  1. Heat a large non-stick skillet over medium high heat. Add 1 tablespoon of vinaigrette and the shrimp. Add shrimp to the pan and season with Greek Seasoning. Cook shrimp 3 minutes or until done, stirring frequently.
  2. Remove shrimp from the pan and keep warm. Add tomatoes, 3 tablespoons of vinaigrette, olives and basil to pan. Cook 1 minute until the tomatoes are thoroughly heated. Remove pan from heat. Add shrimp to pan, toss gently. Sprinkle with cheese, toss well.
  3. Serve with lemon wedges if desired.
